Elderberry Vinegar


Fresh elderberries make a great vinegar that is one of the simplest to make. Simply add the berries to a jar, fill to the brim and cover with vinegar, and infuse for two weeks and strain. No need to heat. Occasionally the water content of elderberries is so high that the water/vinegar ratio is such that the shelf life  is  compromised ; your Elderberry vinegar may turn a little fizzy after several months, but this happens rarely.
